Tilapia with Pico Garlic Rub
Makes 6 servings, $1.34/serving

Rub
Olive oil 1-1/2 tsps.
Tone's® Granulated Garlic 2 tbsp.
Tone's Parsley Flakes 2 tbsp.
Tone's Spanish Style Paprika 1 tsp.
Tone's Cayenne Pepper 1/2 tsp.
Spice Islands® Sea Salt 1/2 tsp.
Tilapia
Tilapia fillets 6
Flour 1/2 cup
Olive oil 2 tbsp.
Lime wedge 1

Mix rub in a medium bowl. Set aside.

Coat both sides of fish with flour. Heat 2 tablespoons olive oil in a large skillet on medium heat. Place fish in skillet. Cook for 3 to 4 minutes. Turn and brush on the garlic rub. Cook 3 to 4 minutes.

Process oats, Parmesan cheese and seasonings in a food processor or blender until finely ground. Place in a separate shallow dish.

Remove fish from skillet and squeeze lime juice over all. Serve immediately.



Soffrito Rice
Makes 6 servings, $.28/serving
Prep Time: 10 minutes
Cook Time: 15 to 18 minutes

Olive oil 1 tbsp.
Bacon 2 slices, chopped
Onion 1/2 cup, chopped
Red pepper, small 1, chopped
Water 2-3/4 cup
Tone's® Beef Base 1/2 tsp.
White rice, converted 1-1/2 cups
Spice Islands® Black Pepper & Sea Salt 1/2 tsp.

Heat oil in a large saucepan. Add bacon and cook until bacon is browned. Remove bacon. Add onions and bell pepper; sauté 5 minutes until vegetables are tender. Add water, beef base and rice.

Cover and reduce heat to simmer. Cook 15 to 18 minutes until rice is tender. Add bacon, black pepper and salt to taste.
