Cajun French Dip Sandwich

8 Servings 
Beef roast, top round 2-3 lbs.
Tone's Cajun Seasoning 1/4 cup
Water 2 cups
Beef base 2 tsp.
Hot sauce 1/4 cup, 2 Tbsp.
French rolls 8 each

Rub surface of roast generoulsy with Tone's Cajun Seasoning.  Place in roasting pan.  Bake at 300° F. for 20 - 25 minutes per pound until internal temperature is 130° F.  Remove from oven.  Chill.

Combine water, beef base, and hot sauce for use as au jus.  Bring to a boil; reduce heat.

Slice chilled beef into thin slices, approximately 1 ounce each.  Add a small amount of the au jus to the pan.  Steam or bake until beef is hot, at least 140° F. 

Top French rolls with beef and serve extra au jus on the side.
