Cumin is the ground, dried fruit of the Cuminum Cyminum plant. It is earthy, hot and tangy in flavor and is pale green to tan in color. It is similar in appearance to caraway seed before being ground. Its use has increased dramatically due to the growing popularity for Mexican, Indian and North African foods.
Ground Cumin is an essential ingredient in Mexican and Indian cooking. Use it in rice and curry dishes, chili, nachos, meatballs, guacamole, eggs and omelets, pork, lamb, chicken couscous, barbecue sauces and vegetables. For a unique flavor, try in breads and sweet baked goods. Best when used during the cooking process. Start with 1/8th tsp. per serving and adjust from there. Unless a strong cumin flavor is desired, use sparingly as this spice is potent and will dominate other flavors.
