Chocolate Cupcakes with Dulce de Leche Icing

Dulce de Leche is caramelized sweetened condensed milk.  It makes these cupcakes unforgettable!

1/2 cup butter

1-1/2 cups sugar

2 eggs

2 cups cake flour

1/2 cup cocoa

1/2 teaspoon salt

1/4 teaspoon Ground Cinnamon

1 cup cold water

2 teaspoons vanilla extract, pure

1 teaspoon baking soda

2 teaspoons hot water


2 cups powdered sugar

1/3 cup dulce de leche

1 teaspoon vanilla extract, pure

1 dash Ground Cinnamon

1 to 2 tablespoons milk


Cream butter and sugar with electric mixer until light and creamy colored, about 5 minutes. Add eggs, beating well after each.

Mix flour, cocoa, salt and cinnamon together in a medium bowl. Gradually add flour mixture and water to batter, alternating. Beat in vanilla extract. Combine soda and hot water in a small bowl; fold into batter. Portion into cupcake pans lined with liners.

Bake for 20 to 25 minutes at 350º F. Cool at least 30 minutes.

Beat all frosting ingredients together in a large bowl until creamy. Ice each cupcake.
