Mediterranean Halibut Recipe

Mediterranean Halibut Recipe

  • Serve this delicous fish with rice pilaf!

Ingredients

  • 4 medium roma tomatoes
  • 2 tbsp black olives, chopped
  • 2 tsp Minced Onion
  • 2 tsp Sweet Leaf Basil
  • 1/2 tsp Garlic Powder
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 1/4 cup white wine
  • 4 (6 to 8 ounces each) halibut steaks
  • 1/2 cup crumbled Feta cheese

Directions

  1. Heat oven to 425ºF .
  2. Combine tomatoes, olives, onion, basil, garlic, olive oil, lemon juice and white wine in a medium bowl; set aside.
  3. Place halibut in a non-stick baking pan.
  4. Top with tomato mixture; sprinkle feta cheese over tomatoes.
  5. Bake 12 to 14 minutes, or until fish flakes easily with a fork.

Tips

You may substitute tuna or swordfish fillets for the halibut.
