Pure vanilla extract in the muffins andcrumb topping make these muffins outstanding.

Ingredients

Muffins

  • 1 ½ c. all-purpose flour
  • 1 tsp. baking powder
  • 13 c. butter OR margarine, melted
  • 1 c. sugar
  • ½ c. buttermilk
  • 2 tsp. Pure Vanilla Extract
  • 1 c. dried berry OR cherry berry blend
  • 2 eggs
  • ¼ tsp. salt

Vanilla Streusel

  • 2 tbsp. butter OR margarine, softened
  • 1 tsp. Pure Vanilla Extract
  • ¼ c. sugar
  • 13 c. all-purpose flour

Directions

  1. Preheat oven to 425F.
  2. Combine flour, baking powder and salt in a large bowl.
  3. Mix butter and sugar in a medium size bowl until well blended.
  4. Add eggs and vanilla extract.
  5. Stir in buttermilk and dried berry blend.
  6. Add berry mixture to bowl with flour, stirring just until combined.
  7. Fill muffin cups 2/3 full.
  8. To make topping, sprinkle vanilla over sugar and stir to mix.
  9. Cut in butter and flour to make coarse crumbs.
  10. Sprinkle over muffin batter.
  11. Bake for 12 to 15 minutes until muffins are browned and wooden pick inserted in center comes out clean.
